Kitchen notes · a little help before you start

Slow Cooker Beef Stroganoff

Tender beef and mushrooms in creamy stroganoff sauce are good company for wide egg noodles. The sauce has a gentle sour-cream tang beneath its savory flavor, leaving plenty to catch on the pasta. It's an inviting plate when you're hungry for something rich and substantial.

A few quick notes

1. Brown the beef in batches

The beef only needs a quick sear, not a full cook. Give the pieces room in the pan so they brown instead of steaming, and move them to a plate while you finish the rest.

2. Save the pan flavor

After searing, the wine and butter help loosen the browned bits from the skillet. Scrape the bottom well before adding the onions and mushrooms, because that’s where a lot of the sauce flavor starts.

3. Add the dairy gently

The sour cream goes in near the end, after it’s warmed with a ladle of hot cooking liquid. That small step helps it blend smoothly into the sauce instead of curdling.

Get to know the ingredients

Stew meat

Pat the beef completely dry before seasoning and flouring it. Dry pieces brown faster and better in the skillet, and any large outside pieces of fat should be trimmed away first.

White wine

Use the wine to deglaze the skillet after the beef comes out. Pinot Grigio or Sauvignon Blanc are suggested choices, and chicken broth is noted as an option if you don’t cook with wine.

Sour cream

Use sour cream that isn’t reduced fat, and don’t stir it straight into the hot slow cooker. Mix it with some of the hot liquid first so the finished sauce stays smooth.

The last little job

The last little job

Once the sauce is thickened and the sour cream is in, turn the heat off and swirl in the last cold butter. It gives the stroganoff that smooth, velvety finish before it goes over the noodles.

A little more help as you go

Cream of mushroom is optional

The condensed cream of mushroom soup goes in after the sour cream if you’re using it. It’s optional, so leave it out if you want to stick with the sauce as written up to that point.

Noodles can go in or under

Serve the stroganoff over cooked egg noodles, or stir cooked and drained noodles right into the slow cooker just before serving. Either way, cook the noodles separately first.

A few questions you might have

Do I need to cook the beef through when I sear it?

No. The sear is just for browning, about 45 seconds per side. The beef finishes cooking slowly later, after it goes into the slow cooker with the broth and seasonings.

Why shake the cornstarch with cold water first?

Mixing the cornstarch with cold water before it goes in helps it combine smoothly. Once it’s whisked into the slow cooker, the heat is switched to warm.

Can I add the sour cream directly to the slow cooker?

It’s better to temper it first. Stir a ladle of hot liquid into the sour cream until smooth, then slowly stir that mixture into the slow cooker to help prevent curdling.

What cuts of beef work well here?

Chuck roasts are listed as the best option, with rump roasts and bottom rounds also suggested. The recipe uses beef cut into one-inch cubes before seasoning and browning.

Should the egg noodles cook in the slow cooker?

No, the noodles are cooked separately. Serve the stroganoff over them, or add cooked and drained noodles to the slow cooker at the end and stir before serving.
