Additional recipe notes
If you don’t have a meat mallet, a heavy bottomed skillet or pot, rolling pin, empty wine bottle, etc will work just fine. Removing the silver skin from the pork tenderloin is essential, because if it stays on, that part of the pork will be very chewy and not appetizing. The silver skin will likely be on just one side of the tenderloin, and it looks white and silvery, and a bit shiny. Insert your knife just under that skin and cut it away from the meat on one side. Then turn the knife the other way and while lifting the skin, slide the knife down the length of the tenderloin, separating the skin from the pork. Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
