Super Fresh Grilled Shrimp Salad with Honey Mustard Vinaigrette
A little char makes this shrimp salad especially appealing, right down to the romaine. Sweet corn and a honey mustard dressing give it a bright, generous feel, with warm shrimp among the cool chopped vegetables. Toss a big bowl and bring it straight to the table.

A few quick notes
1. Give the shrimp their marinade
Coat the shrimp in the parsley mixture while you chop the vegetables and whisk the dressing, then thread them onto skewers.
2. Start grilling with the corn
Corn takes the longest turn on the grill. Add the peppers next, with shrimp and romaine toward the end.
3. Whisk as you pour
Stream the olive oil into the vinaigrette while whisking, after combining the mustard, vinegar and first portion of honey.
Get to know the ingredients
Intact romaine hearts
Slice the romaine down the center with the end attached for grilling. Remove the stem before chopping it for the salad.
Husked corn
Remove the husks before grilling the corn, then cut the cooked kernels from the cobs for the salad bowl.
Peeled shrimp
Start with peeled, deveined shrimp so they can be marinated and threaded onto wooden skewers before grilling.

The last little job
Toss and serve straight away
Combine the chopped grilled ingredients with the cucumber, avocado and tomato, toss with the vinaigrette and serve immediately.
A little more help as you go
Choose your sweetness
Taste the whisked vinaigrette before adding the second tablespoon of honey; it's there if you prefer a sweeter dressing.
Chicken is an option
You can use grilled boneless chicken breast or thigh instead of shrimp. Dice it before adding it, allowing a longer cooking time.
A few questions you might have
Do the bell peppers go on the grill chopped?
Grill them whole, then dice them for the salad after cooking. Any of the listed bell pepper colors can be used.
Is the avocado required?
The diced avocado is optional. If you're using it, add it to the salad bowl with the cucumber and tomatoes.
How much shrimp goes on each skewer?
Thread four to six shrimp onto each wooden skewer after marinating, ready to add near the end of grilling.
Do I need to cook the cucumber?
Keep the diced cucumber for the salad bowl; it joins the other chopped ingredients during assembly after the grilling.
What goes into the shrimp marinade?
Parsley, minced garlic, lemon zest, olive oil and salt are mixed first, then the shrimp are stirred through to coat.
Any more cooking tips?
chicken will work well instead of shrimp for this recipe. You can simply grill the boneless chicken breasts or thighs and dice before adding to the salad. Note that the cooking time will be slightly longer for chicken breasts/thighs than shrimp. Though it’s not really part of the recipe, I added in a handful of pea shoots at the end just for pictures!
