Green Chili Recipe
Tender pork in green chili has a deep savory flavor, with tomatillo tang running through the thick sauce. The meat begins to fall into soft strands as you eat. A little sour cream on top is a welcome choice if you like a creamy finish.

A few quick notes
1. Brown pork in batches
Brown half the pork at a time, using the separate oil portions before setting the meat aside.
2. Blend the green base
Puree tomatillos, chiles, herbs and the first stock portion until smooth before returning everything to the pot.
3. Watch for fork tenderness
Keep the covered simmer low until the pork is fork tender and beginning to shred.

Pork
Trim extra fat from boneless shoulder or butt and cut it into the specified chunks before browning.

A few questions you might have
Should the onion brown deeply?
Cook it only until softened, reducing heat if it begins to brown before removing the pot from heat.
Are cilantro stems used?
Yes, the packed cilantro includes leaves and stems, which are pureed into the green sauce.
When do the fire-roasted tomatoes go in?
Add them after blending, together with the browned pork, its juices and the remaining stock.
Does the chili need stirring?
Stir occasionally during its low covered simmer as the pork becomes tender and starts shredding.
Is all the stock blended?
Blend only the first portion with the green ingredients and add the remainder directly to the pot.
Any more cooking tips?
This will thicken into a stew like consistency. You can add a little more stock until to reach desired consistency.
