Additional recipe notes

Find the sun-dried tomatoes in a jar in oil. I find them near the artichoke hearts and roasted red peppers. Any small shape of pasta can be used. Don't be tempted to add the pasta uncooked to the slow cooker, it will have a strange chalky texture. After the cooking time is up, turn off the slow cooker so the pasta doesn't get soggy. Don't like spinach? Simply leave it out.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
