A few quick notes
1. Make four cutlets
Fillet each breast into two thinner cutlets before cooking them until golden and cooked through, then leave on a board to rest.
2. Golden flour before broth
Cook the flour with onion and garlic until it begins turning golden, then pour broth slowly and dissolve it thoroughly.
3. Combine off the heat
Turn off the skillet before mixing in drained tomatoes, chopped chicken and cooked spaghetti, ready to move everything into the casserole dish.
Get to know the ingredients
Diced tomatoes with chiles
Drain the canned tomatoes with green chiles before adding them to the filling. They bring flavor to the cream sauce.
Two divided cheeses
Half the cheddar and mozzarella melt into the sauce. Keep the remaining halves for the casserole topping before baking.
Rested chicken pieces
Let cooked cutlets rest before chopping them into half-inch pieces for mixing with spaghetti and the finished sauce.

The last little job
Look for bubbling edges
Bake the topped casserole until the edges bubble and the cheese melts, then serve the warm chicken spaghetti from the dish.
A little more help as you go
Pasta cooks alongside chicken
Boil and drain the spaghetti while the cutlets cook, so the pasta is ready when the cheese sauce comes together.
Use the chicken skillet
Cook onion and garlic in butter in the same skillet used for chicken before adding flour for the sauce base.
A few questions you might have
Does the cream go in before thickening the broth?
Add it with seasonings and the first cheese portions after pouring broth and dissolving the flour, then stir until smooth.
What size dish holds the casserole?
Transfer the combined chicken, spaghetti, tomatoes and sauce to a nine-by-thirteen-inch dish before adding the remaining cheese over the top.
Do I need to cook the chicken before baking?
Cook the thinner cutlets through in the skillet first, rest and chop, then combine them with the filling for the casserole bake.
Does all the butter go on the casserole top?
The butter cooks onion and garlic in the skillet and becomes part of the flour-thickened sauce; cheese forms the casserole topping.
When is Italian seasoning added?
It joins the sauce with salt, pepper, the first cheese portions and heavy cream after the flour is dissolved in broth.
Any more cooking tips?
Chicken broth combines with the roux to create a rich and thick sauce. And I always recommend using a good quality chicken broth because it adds a lot of flavor to your dish. I use Better than Bouillon to make my broth. ** Cheddar cheese and mozzarella cheese add depth of flavor to the casserole and make it extra rich and cheesy! And yes, I do recommend using both types of cheeses. I first tested this recipe using just cheddar cheese, but adding some mozzarella cheese with it really boosted the level of flavor! ***A can of Rotel tomatoes with green chiles adds a LOT of flavor to the cream sauce and makes this chicken casserole absolutely delish! So don’t skip it !
