Additional recipe notes

For optimal flavor, use freshly grated Parmesan Cheese. As with most fries, enjoy these promptly while they are hot and crispy. You can substitute garlic powder for fresh minced garlic, although the fresh garlic really smells and tastes fabulous. Feel free to make your own homemade fries with Russet potatoes, but soak them in a large bowl of cold water for 30 minutes to draw out the starch. Then drain well and dry with paper towels or a kitchen towel. Place them in a single layer on a baking sheet and bake for 15-20 minutes or until golden brown and crispy. This recipe also works well with sweet potato fries. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or the air fryer.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
