Additional recipe notes
Water bath: Use a rimmed baking sheet with the springform pan sitting directly in the water. Fill to about three-quarters of the baking sheet’s rim height. The water bath helps the cheesecake bake evenly and reduces the risk of cracking. Make sure to process the cottage cheese until there are no lumps. Store the cheesecake covered in the refrigerator for up to 3 days. For the best crust texture, serve within 24 hours. Meringue safety: Use whites separated from pasteurized shell eggs for this method. Dissolved sugar is a texture cue, not a food-safety temperature check, and lightly torching the topping does not cook it throughout.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
