Thai Basil Fried Rice
Fragrant Thai basil gives this fried rice a fresh, peppery character among the shrimp and soft egg. The savory sauce soaks into the rice, with little bursts of chili heat and the warm scent of garlic in each spoonful.

A few quick notes
1. Crush the chili paste
Break down garlic and red chilies with a little salt until finely minced before starting the stir fry.
2. Scramble then remove
Cook the eggs quickly, breaking large pieces apart, then set them aside while the rice cooks.
3. Let rice sizzle
Spread the rice into a thin layer and leave it briefly between tosses so it heats through.

A few questions you might have
Does the rice need cooking beforehand?
Yes. Use jasmine rice that has already been cooked and cooled before making the fried rice.
When do I add the basil?
Add it with the cooked eggs after the sauce has been absorbed, letting the leaves wilt slightly.
Why pause between tossing the rice?
The brief pauses let the rice sizzle against the pan and heat through before it is tossed again.
Do the eggs stay in the pan throughout?
No. Scramble them first, remove them to a bowl and return them near the end with the basil.
How do I prepare the garlic and chilies?
Crush them in a mortar with a small pinch of salt until they are completely minced.
Any more cooking tips?
To make three cups of cooked rice, you’ll want to start with 1 cup of dry jasmine rice. Recipe heavily adapted from my hibachi fried rice.
