Additional recipe notes
I tested the recipe with 3 different varieties of granola and the crust held together each time. I found the Purely Elizabeth granola worked best. If your crust seems dry and doesn’t seem to be holding together well, add another 1-2 Tablespoons of coconut oil. The bars are fabulous on their own, but feel free to spruce them up with a dollop of store-bought or homemade coconut whipped cream .
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
