A few questions you might have
Does the couscous cook on the heat?
Stir it into the boiling broth, then remove the pan from the heat and let it rest until tender.
Can raisins replace the apricots?
Yes. Golden raisins are listed as an alternative to chopped dried apricots in the chicken broth.
When does the chicken return?
Stir the cooked chicken and any juices back in after the couscous has rested and become tender.
When do I add the herbs?
Add the cilantro and mint at the end with the lemon juice, almonds and cooked chicken.
How do I know the broth is ready for couscous?
It should boil lightly in the center too, rather than only simmering around the pan edges.
