Beef and Noodles
Thin beef strips and soft ramen noodles catch a glossy, savory sauce in this skillet dish. Hoisin adds a little sweetness, with lime and Sriracha giving the rich beef a brighter edge. Lightly browned onion winds through the noodles in each forkful.

A few quick notes
1. Brown the onion first
Cook the sliced onion until lightly browned before adding the steak so it has time to soften.
2. Time the noodles
Add ramen to the boiling water just before the steak goes into the skillet because the noodles cook quickly.
3. Have sauce ready
Measure the sauce ingredients before adding them directly to the skillet so the steak does not overcook while you work.
Get to know the ingredients
Steak
Thin strips of sirloin or tenderloin are listed and need only a brief cook before the sauce is added.

Discard the seasoning packets and cook the noodles separately before draining and tossing through the skillet sauce.

How to make it
0 of 6 steps completeMake room for Beef and Noodles
Review ingredients in your pantry before anything is added. Meal plans use your household size; grocery-only additions use the servings selected above.
The last little job
Toss and serve
Add the drained ramen to the beef skillet and toss until everything is coated, then serve immediately.
A little more help as you go
Reduce bubbling if needed
Lower the skillet heat if the sauce bubbles too much while you stir it through the steak.
Extra sauce to taste
You can use extra Sriracha or hoisin at serving or in the sauce if you want more.
A few questions you might have
Do I use the ramen seasoning packets?
Discard the packets and use the soy, hoisin and other listed sauce ingredients to season the noodles.
What steak cuts are listed?
Sirloin or tenderloin can be used, sliced into thin strips before their brief cooking time in the skillet.
When should I start the ramen?
Put it into the boiling water just before adding steak to the onion skillet, since it cooks in about three minutes.
Can I add extra Sriracha?
You can use more Sriracha or hoisin, either stirred into the sauce or served with the finished noodles.
Why prepare sauce ingredients ahead?
They go directly into the steak skillet, so having them ready helps avoid overcooking the thin beef strips.
Any more cooking tips?
This makes 4 fairly small portions, so I suggest serving this with a salad or something if you've got 4 big eaters around the table. If you're making this for 2 people, I suggest using 2 packages of ramen noodles and keeping everything else the same. Feel free to serve with extra sriracha or hoisin sauce or to add it right into the pan when you're making the sauce - you can't go wrong here. 🙂
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
