Additional recipe notes

Ingredients and Substitutions: Meatballs : if you prefer to make meatballs from scratch, try my favorite. Homemade Meatball Recipe or these Turkey Meatballs for something lighter. Broth : I always start with low sodium broth and add salt as needed. If you’re using salted broth, I recommend omitting the added salt and adjusting as needed before serving. Egg noodles : use dry, uncooked egg noodles for this recipe (not fresh or frozen). I don’t recommend swapping for another pasta (although you can try!) as they all require different liquid amounts and cook times.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
