A few quick notes
1. Allow a marinade pause
If time allows, leave the thighs in their lime-and-spice mixture for thirty minutes before they go into the hot skillet.
2. Char the peppers
Use the chicken skillet for the peppers, cooking until soft and slightly charred before seasoning with salt and pepper.
3. Fluff the cooked rice
Use a fork to fluff the rice before mixing in lime juice and cilantro and tasting for seasoning.
Get to know the ingredients
Dry the lettuce
Wash and strain the Romaine or Cos leaves dry before placing them in the bowls with beans and vegetables.
Canned black beans
Wash and drain the canned black beans before assembly. They join the lettuce, corn, onion and cooked peppers.
Sliced avocado
Peel, seed and slice the avocado for the top of each assembled bowl before drizzling over the dressing.

The last little job
Dress the bowls
Slice the rested chicken into strips and arrange it in the bowls. Finish with avocado and the whisked dressing.
A little more help as you go
Tent the cooked chicken
Move the seared chicken to a warm plate and tent loosely with foil while it rests before slicing.
Rice cooks alongside
Cook the rice in stock with garlic while the chicken marinates or cooks, leaving it covered until cooked through.
A few questions you might have
Can I use jasmine rice?
Jasmine rice is listed alongside long-grain white rice. Both use the stock-and-garlic cooking stage before the lime and herbs.
Is cauliflower rice an option?
You can swap the rice for cauliflower rice. They do not give a separate cauliflower-rice cooking method.
What tells me the chicken has finished searing?
It should be golden, charred and cooked right through. Flip it a couple of times for an even char.
Do I need extra oil for the peppers?
Add a little extra oil only if the skillet needs it after cooking the chicken, then soften and char the peppers.
Are the dressing's chili flakes required?
The red chili flakes are optional in the dressing ingredients. Whisk the dressing together before drizzling over the assembled bowls.
Any more cooking tips?
Tip: To keep your burrito bowl low carb, swap out the rice for cauliflower rice.
