Crockpot Lasagna

A warm slice of lasagna with soft pasta and a savory beef filling is a generous dinner to set down. The spinach-flecked cheese layers make every forkful creamy. Give the finished dish its proper rest, then scoop out hot portions with fresh basil over the top.

A few quick notes

1. Reserve plain marinara

Set aside one cup of marinara for the cooker bottom before stirring the rest into the browned beef mixture.

2. Break noodles to fit

Arrange noodles in roughly even layers, breaking as needed. Small overlaps and gaps are allowed when fitting the cooker.

3. Save the last mozzarella

Refrigerate the final mozzarella portion until cooking ends, so it stays as a melted topping instead of disappearing into the sauce.

Get to know the ingredients

Regular dry noodles

Use dry lasagna noodles, not oven-ready or no-boil ones. The slow-cooker directions are written for the regular dry noodles.

Very dry spinach

Thaw the frozen spinach and squeeze it very dry, then break it apart with a fork in the cheese mixture.

Cottage cheese or ricotta

Low-fat cottage cheese or part-skim ricotta are both listed. Mix your choice with spinach, egg, Parmesan and herbs before layering.

The last little job

Rest outside the base

After adding final mozzarella, move the hot insert to a rack, cover and rest at least twenty minutes before slicing and garnishing.

A little more help as you go

Grease the cooker generously

Coat both the bottom and sides of the six-to-seven-quart slow cooker very generously before building the lasagna layers.

Water around the edges

Pour the water gradually across the top and around the edges, letting some trickle between the lasagna and the cooker insert.

A few questions you might have

Can I use the high setting?

The directions specifically use low, warning that high heat will not cook the noodles evenly through the layered lasagna.

What confirms the lasagna is cooked?

The noodles should be tender and the center should register 140°F, after about three to four hours on low.

Can parsley replace the basil?

The ingredient list allows a quarter-cup of chopped parsley instead of the half-cup of basil in the cheese filling.

How long do refrigerated leftovers keep?

Keep it in an airtight container in the refrigerator for up to four days. Reheat in a 350°F oven or in the microwave.

Can I freeze leftover portions?

Freeze airtight for up to three months and thaw overnight in the refrigerator before reheating.

Any more cooking tips?

TO STORE : Refrigerate lasagna in an airtight storage container for up to 4 days. TO REHEAT : Rewarm leftovers in a baking dish in the oven at 350 degrees F or in the microwave. TO FREEZE : Freeze leftovers in an airtight, freezer-safe storage container for up to 3 months. Let thaw overnight in the refrigerator before reheating.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
