Additional recipe notes
Ingredients and Substitutions : Chicken broth : if your broth is not a low sodium or no salt added variety, you will want to reduce the added salt and adjust as necessary once it is cooked. Soy sauce : choose a gluten-free soy sauce if necessary. Rice : I have not tested this recipe with brown rice as they require different cook times. Vegetables : I love the ease of frozen vegetables in here, but they are quite tender by the end of the cook time. If you prefer, you can leave out the vegetables until part way through the cooking for firmer veggies. This is also a great recipe for using up leftover cooked vegetables, or softer vegetables that don’t require a long cook time (ex. broccoli, snap peas or bell peppers would be great in here!).
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
