Additional recipe notes

The red pepper flakes in this recipe are optional. If you like a small bit of spice, you can add up to 1 tbsp, or more depending on the level of heat you like, or leave it out all together if you want it more traditional The pork can be cooked longer than 8 hours in the slow cooker if desired. This will continue to tenderize the meat. I do not recommend cooking for a shorter amount of time since this is a fattier cut of meat, it takes a longer time to break down the tissue and get it really tender Pull the pork from the bone while the meat is still hot to make this process the easiest. Using thermal food gloves can help dramatically with this process since it will be HOT!

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
