Additional recipe notes
When you buy mustard greens look for leaves that are green and crisp. You don’t want wilted or yellowing mustard greens. Chop your mustard greens into pieces that are about the same size so that they cook in about the same amount of time. Your greens can be cleaned and prepped up to three days before you plan to use them. Make sure the greens are dry when you store them in the refrigerator crisper drawer. You can also buy a bag of pre-prepared greens to save some time.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
