A few quick notes

1. Brown vegetables gently

Let the celery, carrots and onion lightly brown, lowering the heat if they begin coloring too quickly.

2. Dissolve the flour

Pour in the broth slowly and stir until the flour has dissolved before adding chicken and cream.

3. Keep the simmer gentle

After bringing the soup to a gentle boil, lower the heat and simmer with the lid slightly open.

Get to know the ingredients

Chicken

Use cooked or rotisserie chicken, adding it with the cream after the flour has dissolved into the broth.

Cream

Heavy or whipping cream is recommended; lower fat alternatives can curdle with the lemon and high heat.

Tortellini

Use refrigerated cheese tortellini and add it with the lemon juice and parsley near the end.

The last little job

Taste for lemon

Wilt the spinach, season generously and add another squeeze of lemon if you want a brighter broth.

A little more help as you go

Plan pasta for leftovers

For planned leftovers or freezing, add tortellini when reheating individual portions so it does not absorb the broth.

Add spinach last

Let the spinach wilt for just a minute or two after the tortellini cooking stage.

A few questions you might have

Can I use lower fat cream?

It isn't recommended because lemon juice and the cooking heat can cause lower fat dairy to curdle.

When do the tortellini go in?

Add them with the lemon juice and parsley after the initial five minute simmer with chicken and cream.

Can I make it more lemony?

Taste after adding spinach and squeeze in more lemon juice as needed for the flavor you want.

How can I prepare it for leftovers?

Keep the tortellini out of the main batch and add it when reheating individual portions.

How long does spinach need?

Add it last and let it wilt for a minute or two before the final seasoning.

Any more cooking tips?

This soup feeds 4-6 depending on portion size. I do NOT recommend subbing the cream for something lower fat as the acidity from the lemon juice and high heat the soup is cooked at is likely to curdle it. Whipping cream or heavy cream that’s at least 33% fat is recommended for this recipe. You could try subbing coconut milk if needed, but that may impact flavor. If you’re planning on having lots of leftovers or freezing this soup, add the tortellini in when reheating individual portions vs. all at once as it does soak up the broth and get puffy.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
