Additional recipe notes

Use Different Root Veggies: While sweet potatoes, carrots, and parsnips are a great combination, you can do other varieties, too! Winter squash, rutabaga, wedges of cabbage, and potatoes are all great options. Don’t Crowd the Pan: If you don’t have a large baking sheet, use a couple of smaller pans so you don’t have to crowd the veggies together. Giving them a little space helps them brown nicely and crisp up. Add-Ins: When the veggies are done roasting, adding a sprinkle of fresh lemon juice, chopped fresh herbs, or Parmesan can enhance the flavors even more.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
