Jennifer Aniston Quinoa Salad

Quinoa salad is especially appealing when there is plenty to find among the grains. Crisp cucumber, salty feta and chopped pistachios make this a lunch you can settle into. Add the lemony dressing, give everything a toss and enjoy a forkful with some herbs caught in it.

A few quick notes

1. Rinse the quinoa well

Use a fine-mesh strainer and cold water, rubbing the grains gently, unless you are starting with prerinsed quinoa.

2. Cool the cooked grains

Fluff quinoa after the broth is absorbed, then transfer to the bowl and chill while preparing the remaining salad ingredients.

3. Dress to your preference

Add the desired dressing amount to the cooled or room-temperature quinoa and prepared ingredients, then toss and taste.

Get to know the ingredients

Prepared chickpeas

Drain and rinse the canned chickpeas. Roasting them is optional if you want a crisper bite in the salad.

Chopped pistachios

The pistachios are roasted and salted, chopped before adding among the remaining salad ingredients and dressing.

Minced fresh mint

Mince the mint leaves before combining with the cooled quinoa, cucumber, feta and other salad ingredients.

A little more help as you go

Quinoa can be cooked ahead

The cooked quinoa can be refrigerated airtight up to two days ahead, ready to combine when you assemble the salad.

Dry chickpeas before optional roasting

If you're roasting the chickpeas, towel-dry them thoroughly and remove loose skins before their first oil-free bake.

A few questions you might have

Is chicken essential to the salad?

The shredded chicken is optional, with rotisserie chicken given as an example of the cooked chicken you could add.

Can I use vegetable broth?

Yes. Vegetable broth is included as an alternative to chicken broth for cooking the quinoa before cooling it.

Does the dressing need a blender?

Whisk it in a small bowl or shake it in a jar, then refrigerate until you are ready to dress the salad.

When do roasted chickpeas get oil?

After their first bake, toss them with a teaspoon of dressing and return them to the oven to reach your preferred crispness.

Can the finished salad be refrigerated?

The directions allow refrigerating the assembled salad for up to four to five days after tossing and seasoning.

Any more cooking tips?

How to Roast Chickpeas (Optional): Prep: Preheat the oven to 425°F. Line a (half) baking sheet with parchment paper and lightly spray it with nonstick cooking spray. Dry: Spread the chickpeas out on a kitchen towel and cover them with another towel. Gently roll them around to loosen some of the skins and to thoroughly dry them (the drier, the crispier!). Remove any loose skins (you don’t have to remove too many, just whatever easily pulls away for even crisper). Bake Without Oil: Transfer to the prepared baking sheet and spread into an even layer. Bake at 425°F for 15 minutes without any oil/spices. Bake with Oil: After 15 minutes, toss the chickpeas with 1 teaspoon of the dressing, then spread into an even layer. Bake an additional 10-15 minutes, or until they reach your desired crispiness. Cool in Oven: Turn off the oven and prop the door open slightly, then let the chickpeas cool inside until ready to use—this helps them dry out thoroughly and get extra crispy.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
