Additional recipe notes
Please refer to my FAQ’s (Frequently Asked Questions) and ingredient list above for other substitutions or for the answers to the most common questions. This is not a very sweet cornbread. There is obviously some sweetness from the honey. I know a lot of people expect pumpkin things to be sweet so I would add about 1/4 to 1/3 cup granulated sugar to the batter if you want it more sweet. You don’t need to change any of the other ingredients when adding the sugar. I’d use 1/4 cup if you just want a little more sweetness or go closer to 1/3 cup if you know you prefer your cornbread on the sweet side.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
