Additional recipe notes
Chicken can be marinated for up to 24 hours in the fridge. The longer you marinate the better the flavors will be. Dave time by frying the onions a day ahead! For a healthier option with less ghee, try my Airfryer crispy onions recipe . Use aged extra long-grain basmati rice for the most authentic flavor and texture. Before serving allow the biryani to sit uncovered for 5 minutes. Gently fluff the rice using a fork or a silicone spatula. This will help the delicate rice grains to firm up a bit preventing them from breaking.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
