Moist Oven Baked Cod

Lemon brings out everything appealing about a tender piece of cod, and a touch of cayenne gives this one a gentle spark. The fish stays at the center of the plate. A scattering of parsley makes it look as fresh and inviting as it tastes.

A few quick notes

1. Dry the fish well

After rinsing, pat the cod dry before it goes in the tray. Extra surface moisture can get in the way of the oil and seasonings clinging neatly to the fish.

2. Thickness decides the bake

The bake time depends on how thick your cod is, so don't treat the range like a fixed timer. Thinner fillets will be ready sooner than chunky loins.

3. Serve it right away

Cod is at its best as soon as it's baked and garnished. Add the parsley at the end, then serve while the fish is still moist and delicate.

Get to know the ingredients

Cod fillets or loins

Either fillets or cod loins work here. Loins are usually thicker, so use the bake-time range as a guide and judge them by thickness rather than shape.

Fresh lemon juice

Use the lemon juice after the olive oil, right on the fish in the tray. Freshly squeezed juice keeps the seasoning bright without needing much else.

Cayenne, lightly

The cayenne is measured in dashes, so it's meant to be a gentle bit of heat rather than a heavy coating. Sprinkle it over after the salt and lemon.

The last little job

The last little job

Once the cod comes out of the oven, scatter over the chopped parsley and serve straight away. That fresh finish belongs at the end, not before baking.

A little more help as you go

Using frozen cod

Frozen fillets are fine, but thaw them completely before baking. Pat them dry afterward so they behave like fresh fish in the tray.

Skin-on is okay

Skin-on cod works the same way here, so use what you have and keep the same baking approach.

A few questions you might have

Should I cover the tray with foil?

Cover the baking tray with aluminum foil before baking. A glass baking tray is recommended because it holds heat well and helps the fish cook evenly.

Do I need to oil both sides of the cod?

The fish gets a drizzle of olive oil in the tray. You can also rub both sides with plenty of extra virgin olive oil, which can help prevent dryness. If you do, let it rest briefly before adding the other seasonings.

Can I use cod loins instead of fillets?

Yes. Cod loins are included as an option. Because they can be thicker than fillets, use the thickness of the pieces to guide where they fall in the baking range.

What order do the seasonings go on?

Arrange the cod first, then drizzle on the olive oil. Follow with lemon juice, salt, and cayenne pepper before baking.

When does the parsley go on?

Add the chopped parsley after baking, just before serving. It is a garnish here, so it stays fresh and green instead of cooking with the fish.

Any more cooking tips?

If using frozen fish fillets, thaw them completely before baking. Pat dry the fillets with a paper towel to remove any excess moisture. You may use skin-on cod fish, they work the same. Use a glass baking tray as it retains heat better and helps food cook evenly. Cover the baking tray with a piece of aluminum foil before baking. To prevent dryness, drizzle and rub both sides of the cod fillets with a good amount of extra virgin olive oil. Let them sit for 5 minutes before adding other seasonings to the fish. This step is optional as my recipe ensures moist and juicy cod. To add Mediterranean flavor to your dish, you may incorporate minced garlic, sliced Kalamata olives, cherry tomatoes and/or capers to brighten up the dish. Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
