How to Steam Green Beans

Green beans with a little butter are especially inviting when they still have a gentle bite. Their fresh flavor needs only simple seasoning after cooking. Check them as they steam, then serve warm while the butter melts lightly across the bright green beans.

A few quick notes

1. Trim attached stems

Rinse the beans, then snap off any attached stems before deciding whether to leave them whole or break them in half.

2. Keep water below the basket

Use the shallow water level described, making sure it stays below the basket holes rather than soaking the beans from underneath.

3. Start timing at the boil

Count the steaming time from when water begins boiling, checking with a fork for tender beans that still hold their shape.

Get to know the ingredients

Fresh green beans

The main method uses fresh beans. Aim for vibrant color and tenderness without mushiness as you check them during steaming.

Butter off the heat

Drain away steaming water, return beans to the empty pot and let their residual warmth melt the butter while stirring.

Simple salt seasoning

Add salt after the butter has melted through the cooked beans, tasting alongside the pepper before bringing them to the table.

The last little job

Butter and season

Remove the basket and discard cooking water, then stir butter through the warm beans, add salt and pepper and serve.

A little more help as you go

A pot or deep skillet

Either vessel is allowed, with a lid and steam basket to hold the washed beans above the shallow layer of water.

Test your preferred tenderness

The five-minute steaming estimate can vary with your preference. Use a fork and stop while the beans are tender without becoming mushy.

A few questions you might have

Can I steam frozen beans?

Frozen beans work, but their partial precooking changes the timing, so check the package recommendations.

What if I do not have a steam basket?

You can place the beans directly in the inch of water. The bottom layer may cook slightly more.

Do the beans have to be cut in half?

You can snap them in half or leave them whole, as the first step allows, after removing any attached stems.

Should I butter the steaming water?

Keep butter for after cooking. Discard the water, then add butter to the hot beans in the empty pot and stir.

Does the covered pot start over high heat?

Yes. Cover and turn to high to bring the water to a boil before counting the beans' steaming stage.

Any more cooking tips?

Frozen green beans are blanched, or partially cooked, before freezing. So, while you can steam them using this method, they may need a different amount of time to cook. Check the package for recommended cooking times. **For years, before I had the few dollars to spend on a steam basket, I simply steamed my green beans directly in the one-inch of water. The bottom layer of green beans cooked slightly more than the rest, but guess what? It was barely noticeable. If you’re short on cash, f ollow the directions below minus the steam basket and you’ll do just fine.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
