A few quick notes

1. Oil both components

Toss the pork chops and potatoes with the olive oil before rubbing on the seasoning mixture.

2. Blend the seasoning

Mix the ranch powder with the paprika, oregano and pepper so the coating is distributed evenly.

3. Check both parts

Check the pork's specified internal temperature and test that the potatoes are fork tender before serving.

Pork chops

Boneless or bone-in chops both work. The chops used here are around an inch thick.

Potatoes

You can replace the baby potatoes with regular potatoes cut into cubes.

Salt to taste

The ranch mixture supplies seasoning already; add extra salt only according to your taste.

Prepare the sheet

Spray the baking sheet before arranging the pork and potatoes so the oiled ingredients have a prepared surface.

A few questions you might have

Can I use red potatoes?

Yes. Red skin potatoes are one of the options for this dish.

Does the paprika go directly on the meat?

Mix it with the ranch seasoning, oregano and pepper first, then rub that blend over both components.

Is dried oregano intended here?

Yes, the listed oregano is dry and is mixed into the ranch seasoning blend.

Do I roast the potatoes separately?

No, the directions arrange the potatoes and pork together on the sheet before seasoning and roasting.

Can I use fingerling potatoes?

Yes. Fingerlings are another option for this pork and potato dinner.

Any more cooking tips?

Although I used baby potatoes you can use regular potatoes cut into cubes. I prefer Yukon gold potatoes, but red skin potatoes work as well. Another option would be to use fingerling potatoes, but usually I don’t find these often at the grocery store. The pork chops used here were 1 inch in thickness. The sheet pan used is 17.25 x 12.25 x1 inches.
