Additional recipe notes
Any type of chocolate protein powder works, but I recommend using a high-quality brand for the best flavor. This recipe is naturally gluten-free , but I recommend double-checking the label for flavored protein powder . Some brands may add gluten-containing fillers. If you swap the 2% cottage cheese for full-fat cottage cheese , the mousse will be a bit richer and creamier, but the flavor won’t change much. Protein per cup is slightly lower with full-fat , and it has more saturated fat , but both options are still high in calcium .
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
