Additional recipe notes

Low-sodium chicken broth or stock keeps the salt under control. Store-bought is great for convenience, though my homemade chicken stock adds a little extra depth if you have time. Taste before adding extra salt if using a saltier one. Any cooked chicken works : rotisserie, leftover roast, or slow cooker are all fine swaps. Frozen carrots or celery are fine too, just simmer a few minutes longer to compensate. Add noodles in the last 8–10 minutes only , or they’ll swell and soak up too much broth. Noodles keep absorbing broth, so if you won’t be serving right away or know you’ll have leftovers, cook them separately.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
