Crockpot Broccoli and Cheese Soup
A warm bowl of broccoli soup feels especially inviting with sharp cheddar melted through it. Most of the soup is smooth, with a few broccoli pieces left for texture. Ladle it out once the cheese has melted and enjoy its creamy, savory flavor.

A few quick notes
1. Distribute the first ingredients
Stir the vegetables, cream cheese, seasonings and broth together before covering the slow cooker, so everything is evenly distributed.
2. Leave some broccoli pieces
Purée about three-quarters after adding evaporated milk, leaving a few broccoli chunks for texture in the mostly smooth soup.
3. Warm before the cheddar
Cover and warm the blended soup on low before adding the salt, pepper and grated cheese for its final melting stage.
Get to know the ingredients
Grate block cheddar
Grate regular sharp cheddar from a block. Bagged or reduced-fat cheddar is discouraged because it may not melt smoothly.
Reduced-fat cream cheese
Reduced-fat cream cheese is listed, but fat-free is excluded. It joins the vegetables and broth at the start.
Grated carrots
Grate the carrots yourself or use the bagged julienne carrots allowed in the ingredients, adding them with the broccoli.

The last little job
Melt fully before serving
After adding cheddar, cover and cook on high until it fully melts and the soup is hot, then serve warm.
A little more help as you go
Blend hot soup carefully
An immersion blender works in the cooker. Alternatively, blend one-cup batches carefully because the hot soup can splatter.
Thaw before reheating
You can freeze up to three months. Thaw overnight in the refrigerator before warming the soup again.
A few questions you might have
Can I use vegetable broth?
Vegetable broth is listed alongside reduced-sodium chicken broth. Either goes in with the vegetables, cream cheese and seasonings.
What tells me the first cooking stage is done?
The broccoli should be tender after the covered slow cooking, before you stir in evaporated milk and blend the soup.
How should I reheat refrigerated soup?
Warm it in a Dutch oven over medium-low heat or in the microwave.
How long can I refrigerate leftovers?
Refrigerate leftover broccoli and cheddar soup for up to four days after cooking.
What slow-cooker size is listed?
Use a five-to-six-quart slow cooker for the vegetables and broth, keeping it covered during the initial cooking stage.
Any more cooking tips?
The type of cheese you use is very important to this recipe. I highly advise grating your own from the block, as many brands of pre-grated, bagged cheese are coated with starch to prevent sticking. While convenient, this starch can prevent the cheese from melting smoothly. I also recommend using regular, not light cheese for this reason—reduced fat cheese sometimes does not melt as well. TO STORE : Store leftovers in the refrigerator for up to 4 days. TO REHEAT : Rewarm soup in a Dutch oven on the stovetop over medium-low heat or in the microwave. TO FREEZE : Freeze the soup for up to 3 months. Let thaw overnight in the refrigerator before reheating.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
