Baked Brie Recipe
Breaking into golden pastry to find soft brie inside is a small pleasure worth making room for. The raspberry preserves add a sweet note against the rich cheese. Share it while the middle is warm, and don't leave all the crisp pastry for somebody else.

A few quick notes
1. Roll it before you fill it
Give the puff pastry a quick roll on a floured board before moving it to the baking sheet. That thinner sheet wraps around the brie more neatly and bakes into a better bundle.
2. Keep the jam on top
Spoon the raspberry preserves onto the brie before you fold the pastry over. Try to keep it centered so it stays tucked inside instead of leaking out at the edges.
3. Clean up the egg wash drips
After brushing the pastry, wipe away any egg that lands on the baking sheet. It’s a small step, but it helps keep the pan from getting browned-on egg around the bundle.
Get to know the ingredients
Puff pastry
Use one sheet of puff pastry, which is half a box here. Roll it to 1/4 inch thick with a floured rolling pin so it’s ready to fold around the cheese.
Brie wheel
The brie goes right in the center of the pastry as a whole wheel. Keeping it centered gives you enough pastry on all sides to fold up into a sealed bundle.
Raspberry preserves
The preserves go on top of the brie, not underneath it. That placement keeps the fruit in the middle of the parcel once the pastry is folded over.

The last little job
The last little job
Let the baked brie cool for a few minutes before moving it. Use a spatula and go gently, then serve it on a platter with crackers and a small knife while the pastry is golden and the cheese is soft.
A little more help as you go
Watch for the pastry color
Bake until the puff pastry is golden brown. The timing is 35 to 40 minutes, but the color is the clearest cue that the wrapped brie is ready to come out.
Move it after a short rest
A few minutes of cooling makes the bundle easier to transfer from the baking sheet. It’ll still be warm for serving, but less likely to slump as you lift it.
A few questions you might have
Do I put the puff pastry on the baking sheet before or after filling it?
After rolling it out, move the puff pastry to the baking sheet first. Then place the brie in the center, add the preserves, and fold the pastry into a bundle right on the pan.
What should the egg wash look like?
Whisk the egg with the water, then brush that mixture over the pastry bundle. If any runs onto the baking sheet, wipe it away before baking.
How do I know when the baked brie is done?
The pastry should be golden brown. The bake time is 35 to 40 minutes, so start looking for that color near the end of the range.
Can I move it to the platter right away?
Let it cool for a few minutes first. Then slide a spatula under the bundle and move it gently to the serving platter.
What should I serve with it?
The recipe serves it with crackers and a small serving knife, so people can cut into the pastry-wrapped brie and scoop it up easily.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
