A few quick notes
1. Keep wrapper soaking brief
Lift each wrapper from its short soak while still fairly firm; it continues softening as you add the filling.
2. Fill the near third
Arrange a little of each vegetable, shrimp, herbs and noodles on the wrapper's third closest to you before folding.
3. Fold sides before rolling
Bring both side edges over the filling, then pull the near edge up and roll tightly around the ingredients.
Get to know the ingredients
Cooked shrimp without tails
Use small cooked shrimp that are deveined and have their tails removed before arranging them inside the rolls.
Thin mango strips
Peel and slice the mango thinly before gathering it with the vegetables, herbs and shrimp for assembly.
Rice vermicelli
Cook the noodles by their package directions, then drain and rinse cold before putting a pinch into each roll.

The last little job
Smooth peanut sauce alongside
Pulse the sauce ingredients smooth in a processor or blender, ready to serve with the tightly rolled spring rolls.
A little more help as you go
Prepare the whole filling spread first
Gather chopped vegetables, herbs, noodles and cooked shrimp before soaking a wrapper, so assembly can follow without delays.
Wrap individually for storage
The rolls are freshest the same day, but you can refrigerate them for two to three days, individually wrapped in plastic inside an airtight container.
A few questions you might have
Why not soak wrappers until completely soft?
A long soak can make them too soft and prone to tearing; they soften further while you add the filling.
Can I use chicken instead of shrimp?
Chicken is an option too. You can also use cooked chopped chicken as an extra filling.
Does peanut butter have to be smooth?
Smooth or crunchy peanut butter is included for the sauce, which is pulsed with the other sauce ingredients until smooth.
Are extra vegetables allowed?
Bean sprouts, avocado, romaine or bell pepper are additional filling options if you'd like them.
Which fresh herbs go into the rolls?
Mint, basil and cilantro are all included, with a few leaves of each layered alongside the vegetables, shrimp and noodles.
Any more cooking tips?
Other filling ingredient ideas: bean sprouts sliced avocado cooked, chopped chicken romaine lettuce leaf sliced bell peppers Storing: The rolls taste best the day they are made, but they can be stored in the refrigerator for 2-3 days. Wrap each roll individually in plastic wrap (to keep the wrapper soft and to keep them from sticking together) and store in an air-tight container in the fridge.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
