A few quick notes
1. Start with the crumbs
Crush the cereal before processing the chicken, then put the crumbs in their shallow bowl so the coating station is ready.
2. Wet your hands
Damp hands make the chicken mixture easier to handle as you roll and flatten it into small nugget patties.
3. Remember the halfway turn
Flip the nuggets halfway through baking so both sides get their turn against the lined baking sheet.
Get to know the ingredients
Corn flakes
Measure the cereal before crushing it. The larger amount of whole flakes becomes the smaller amount of crumbs used for coating.
Finely grated Parmesan
Stir the finely grated cheese through the crumbs before breading, so the cheese is distributed across the coating.
Instant potato flakes
The potato flakes go into the chicken mixture with cold water and seasonings. They stay separate from the cereal coating.

The last little job
A short rest
Give the cooked nuggets a few minutes out of the oven before serving. Stop baking once they're cooked through to avoid drying them.
A little more help as you go
Freeze before baking
Bread the nuggets, freeze them flat for an hour, then bag them for up to three months. Bake them from frozen.
Clean the processor
Use a clean processor bowl for the chicken after making the crumbs. Keep the prepared coating bowl separate from that mixture.
A few questions you might have
Can I use panko for the coating?
Yes. Use three-quarters of a cup, spray the breaded nuggets with cooking spray, bake thirteen minutes, then broil for two minutes.
Do I need a processor for the cereal?
A rolling pin and a large zip-top bag are also listed. Crush the flakes until they form fine crumbs.
How finely should I chop the chicken?
Pulse the chicken with the potato flakes, water and seasonings until finely chopped, then shape that mixture into patties.
How much chicken mixture makes one nugget?
Use about a tablespoon for each patty. Flatten it before pressing it gently into the crumb mixture so the coating adheres.
Can I use garlic powder instead of garlic salt?
The ingredient list allows half a teaspoon of garlic powder plus half a teaspoon of salt in place of the garlic salt.
Any more cooking tips?
You can use 3/4 cup panko crumbs instead of corn flakes. To get the panko crumbs golden, spray nuggets with cooking spray before baking and bake for 13 min then broil nuggets additional 2 minutes to give them a golden glow.
