A few quick notes
1. Make room in the oven
Arrange the rack before preheating so the turkey sits in the center when the roasting pan goes in.
2. Dry and season the cavity
Remove the neck and giblets, pat the outside dry, and season inside before adding the cavity aromatics.
3. Check browning halfway through
If the skin is getting too brown at the halfway check, lay the specified foil over the turkey and continue roasting.
Get to know the ingredients
Softened butter first
Use room-temperature butter to mix with the minced garlic, herbs and salt, then melt that mixture for brushing.
Quartered onion
The peeled, quartered onion goes inside the cavity with lemon, garlic and the remaining herbs before the legs are tied.
Divide the garlic
Most cloves are minced into the herb butter. Keep the remaining two for the cavity with the other aromatics.

A little more help as you go
Thaw in the refrigerator
Thaw the turkey in the refrigerator, allowing about a day for each four to five pounds before preparing the bird.
Save leftovers airtight
Store the remaining turkey in an airtight container in the refrigerator for up to four days after the meal.
A few questions you might have
Does the herb butter go inside the cavity?
The cavity gets onion, lemon, garlic and remaining herbs. Melted garlic-herb butter is brushed over the outside skin.
Should the wings stay spread out?
Tuck them underneath the turkey after tying the legs and positioning the bird on the rack in the roasting pan.
How do I check the turkey is cooked?
Use the instant-read thermometer as directed and look for the stated 165°F internal temperature, rather than relying on browning alone.
When do I melt the herb butter?
Mix it while softened first, then melt it in the microwave or over low heat before brushing the turkey's skin.
Does the bird sit directly in the roasting pan?
The directions place it on a roasting rack inside the pan after filling the cavity, tying the legs and tucking the wings.
Any more cooking tips?
Thaw a frozen turkey in the refrigerator, allowing approximately 24 hours for every 4-5 pounds turkey. A good rule of thumb is to cook a turkey (unstuffed) for 13-15 minutes per pound at 325°F (163°C). Use a meat thermometer inserted into the thigh to ensure the internal temperature reaches 165°F (74°C.) Allow the turkey to sit for at least 45 minutes to give the meat time to absorb the juices. Cutting it too soon can result in the juices dripping out and ending up on the bottom of the pan versus in the meat. Store any remaining turkey in an airtight container in the fridge for up to 4 days. Nutritional values provided are an estimate and will vary depending on the brands used.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
