Chicken Alfredo Gnocchi Bake
Soft gnocchi in creamy garlic sauce makes this chicken bake particularly tempting, especially beneath its melted cheese top. The little potato pillows catch plenty of sauce between them. A generous spoonful with some of the golden topping is a very welcome way to begin dinner.

A few quick notes
1. Soften the cream cheese well
Very soft cream cheese melts into the cream and broth much more easily. Take it out ahead of time, or use the microwave shortcut in the first step before you start the sauce.
2. Keep the sauce loose
Stop once the cream cheese has melted in. The sauce still needs time with the gnocchi and then a bake, so letting it thicken too much in the skillet can make the finished dish heavier.
3. Use the upper oven rack
The rack goes in the top third of the oven so the cheese topping can bake up nicely while the gnocchi finishes underneath. Bake it uncovered, then give it a few minutes to settle.
Get to know the ingredients
Uncooked gnocchi
Use potato gnocchi straight from the package here. It cooks first in the creamy sauce for a few minutes, then finishes in the oven, so don't boil it separately.
Cooked chicken
The chicken needs to be cooked before it goes into the skillet. It only has a short simmer with the gnocchi before baking, so this isn't the place for raw chicken.
Freshly grated parmesan
The parmesan is split between the sauce and the topping. Stir half in off the heat for flavor, then scatter the rest over the gnocchi with the mozzarella before baking.

The last little job
Let it rest before serving
After baking, leave the dish for 5 minutes. The sauce thickens a little as it cools, which makes it easier to scoop and gives you a creamier finish. Taste and add salt and pepper if it needs it.
A little more help as you go
Spread it evenly in the dish
Once the skillet mixture goes into the baking dish, spread it into an even layer. That helps the gnocchi sit in the sauce and gives the cheese topping a fair chance across the whole bake.
Stir often once the gnocchi goes in
The gnocchi and chicken only cook together briefly in the skillet, so stir often during those few minutes. It keeps the sauce moving and helps everything get coated before baking.
A few questions you might have
Do I cook the gnocchi before adding it?
No. Add the potato gnocchi uncooked to the skillet with the chicken. It gets a head start in the sauce, then finishes in the oven while the top bakes.
Why shouldn't I simmer the sauce longer?
The sauce is meant to stay a little loose before baking. Once the cream cheese has melted in, move on to the gnocchi so the dish doesn't end up too thick after the oven time.
Can I add raw chicken to the bake?
No, use cooked chicken. The recipe only warms it with the gnocchi for a short time before baking, so raw chicken wouldn't fit the timing here.
Why is the parmesan added in two stages?
Half goes into the sauce after the gnocchi and chicken cook briefly, then the rest goes on top with the mozzarella. That gives the bake flavor through the middle and cheese over the top.
Should I cover the dish in the oven?
No, bake it uncovered. That lets the parmesan and mozzarella topping bake while the sauce and gnocchi finish together in the dish.
