Additional recipe notes

Cut the broccoli florets into similar sizes so they cook evenly. Do not overcrowd the pan. This is the most common mistake people make with sautéed vegetables. Too much in the pan at once lowers the temperature and causes the broccoli to steam instead of sauté. Cook in batches if you need to. Add the garlic near the end of cooking to prevent it from burning. The broccoli should still have a slight bite when you take it off the heat. It will continue cooking briefly from the residual heat in the pan, so pull it just before you think it is fully done. Fresh broccoli gives the best texture, but frozen broccoli can also be used. This recipe works just as well with broccolini or even cauliflower if that is what you have on hand.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
