A few quick notes
1. Shake off excess flour
Coat chicken in the seasoned flour bag, then shake off excess before placing it in the hot skillet.
2. Reduce sauce uncovered
Gently boil the broth, wine and cream mixture uncovered until reduced, slightly thickened and darker in color.
3. Return the chicken juices too
Add the chicken and any juices on its plate back to the sauce for the final low simmer.
Get to know the ingredients
Thin chicken pieces
Pound the breasts to the listed thinness. If they're very large, halve them first so the pieces are manageable.
Sliced mushrooms
Bella or button mushrooms are listed, cooked in the remaining butter until they start browning before shallots join.
Dry Marsala
Use the dry Marsala listed, adding it with broth, cream, thyme and seasonings for the uncovered reduction.

Review ingredients in your pantry before anything is added. Meal plans use your household size; grocery-only additions use the servings selected above.
The last little job
Warm the chicken gently
Simmer returned chicken on low until warmed and sauce thickens a little more, then add optional parsley and serve.
A little more help as you go
Aim for a thin cream sauce
The sauce only starts thickening near the end of its reduction, so follow the stated thin-sauce texture rather than expecting gravy.
Scrape up the browned bits
Use a wooden spoon to release pan-bottom bits into the liquid when broth, Marsala and cream are added.
A few questions you might have
Are chicken tenderloins allowed?
Chicken tenderloins are listed alongside pounded breasts for coating with seasoned flour before browning.
Does garlic cook with mushrooms from the start?
Let mushrooms begin browning, then add finely chopped shallot, minced garlic and the stated salt portion.
Is all the butter used for chicken?
Use the first portion with oil for browning chicken; the remaining tablespoon cooks the mushrooms afterward.
Can I use a nonstick skillet?
The directions allow nonstick, while recommending stainless steel for better browning of the flour-dusted chicken.
Does parsley simmer with the thyme?
Thyme goes into the reducing sauce, while parsley is an optional final sprinkle over the warmed chicken.
Any more cooking tips?
If your chicken breasts are large (like the ones in the photos that are about ¾ lb/340 g each), it’s best to first cut them horizontally to form four flat fillets, then pound them to an even ¼-in (6-mm) thickness. If you pound large chicken breasts without first halving them, they’ll be huge. Of course, you could also pound them thin first and then cut them in half vertically; the only drawback is that they’ll lose their natural shape (which, admittedly, is not a big deal!).
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
