Additional recipe notes
You want to purchase large, burrito-sized tortillas not soft taco sized. To make this easier to make, feel free to use store-bought real bacon pieces (these can usually be found with the salad toppings in your grocery store.) I like to use shredded iceberg lettuce but you can have fun with this recipe and use romaine, butter lettuce or even some arugula or spinach leaves! The type of shredded cheese used is completely customizable. Mozzarella, gouda or even goat cheese would all taste great! Make sure you get a light brown char on each side of your tortillas. Since these are folded over, you want to make sure the cheese is melted. Really want to take these up a notch – try serving this with my recipe for HOMEMADE RANCH DRESSING !
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
