Additional recipe notes
Updated 9/2025 Tapioca pearls come in a variety of sizes! When I first published this recipe, I was only able to find them in a medium size which took about 10 mins to cook and 10 mins to hang out. Recently, I’ve made this with small tapioca pearls which take 8 mins to simmer and then 7-8 mins to hang. All this to say, check the packaging for cooking directions first and use those if provided. General guides are in the recipe as well, but it may vary greatly based on the size of tapioca pearls.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
