A few quick notes
1. Cut a pocket, not all the way through
Use the sharp knife to make a side pocket in each breast, leaving the other edges attached so the cheese has somewhere to sit. If you do cut through a little, toothpicks can help hold things together.
2. Get the pan hot enough to color the chicken
The chicken only sears for a few minutes on each side before baking, so let the pan heat properly. You're looking for a golden outside, not fully cooked chicken at this point.
3. The thermometer decides when it's done
Because the breasts are stuffed, checking the temperature matters more than judging by looks. Bake until an instant-read thermometer reads 165˚F, then serve right away.
Get to know the ingredients
Small chicken breasts are easier to stuff
The recipe uses small breasts, or about 1 pound total. That size makes the pockets more manageable and helps the chicken finish in the oven after the sear.
Save some cheese for the top
The mozzarella and parmesan get mixed first, then used in two places: inside the chicken and over the sauced breasts before baking. Don't pack every bit into the pockets.
Marinara goes on after searing
Sear the stuffed chicken first, then spoon the marinara over it before baking. Adding the sauce after the pan step keeps the chicken from steaming before it has a chance to turn golden.

The last little job
The last little job
Once the chicken is baked through and the cheese is melted on top, serve it immediately. The suggested sides are simple ones: chopped salad, steamed veggies, or zucchini noodles.
A little more help as you go
Prefer it unstuffed?
For a simpler option, slice the chicken breasts in half and pan-sear them without stuffing, then top with marinara and cheese. This saves cutting pockets.
A garlickier option
For more garlic flavor, add chopped garlic to the pan shortly before the marinara goes in. Keep that timing short so the garlic doesn't take over or burn.
A few questions you might have
Do I cook the chicken all the way through in the pan?
No. The pan step is for browning the outside. After the chicken is golden on both sides, the sauce and cheese go on, and the chicken finishes baking in the oven.
How much cheese goes inside each chicken breast?
Use about 1/4 cup of the cheese mixture for each breast. The remaining cheese goes over the marinara before the chicken bakes.
What if the stuffed chicken won't stay closed?
Fold it closed as best you can, or seal it with toothpicks if you have them. A little cheese peeking out is okay, but closing the pocket helps keep most of it inside.
Can I use a different cheese?
Yes, you can use mozzarella or your favorite melting cheese. Parmesan is still part of the cheese mixture, so keep that in for the Chicken Parmesan flavor.
When does the marinara go in?
Add it after the chicken has been seared and the pan is off the heat. Spoon it over the breasts, add the remaining cheese, then bake uncovered.
Any more cooking tips?
To make unstuffed: If you are not comfortable stuffed chicken breasts or to make the chicken parm unstuffed, simply slice the chicken breasts in half and pan sear (without stuffing) then top with marinara sauce and cheese. To add more garlic flavor: Toss 3-4 cloves of chopped garlic into the pan 30 seconds before adding the marinara sauce.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
