Crock Pot Chicken and Rice Soup
Chicken and brown rice in a savory, herby broth makes a soup worth slowing down for. The rice gives each spoonful substance, with tender vegetables around the shreds of chicken. Lemon adds a bright finish if you like a little tang in your bowl.

A few quick notes
1. Soften vegetables first
Cook the diced vegetables in the pan until beginning to soften before transferring them to the cooker.
2. Check chicken early
Remove the chicken if it finishes before the rice, then cover again while the rice becomes tender.
3. Remove herb stems
Discard the bay leaf and thyme stems after the covered cook before finishing the soup.
Get to know the ingredients
Rice
Rinse the brown rice before adding it over the vegetables, then arrange the chicken on top.
Stock
Use regular chicken stock rather than unsalted stock or broth, keeping extra for thinning the finished soup.
Chicken
Boneless skinless breasts or thighs are listed; shred the cooked meat after it cools slightly outside the pot.

The last little job
Lemon and fresh thyme
Return shredded chicken, stir in optional lemon, adjust the soup's consistency and finish with additional fresh thyme.
A little more help as you go
Thin after resting
Add water or stock when reheating if the soup has thickened as the rice sits.
More lemon for leftovers
A little additional lemon can refresh reheated leftovers if you want to restore their citrus flavor.
A few questions you might have
Can I freeze leftovers?
Yes, freeze for up to three months and reheat gently after storage as directed.
How long can leftovers stay refrigerated?
Refrigerate leftover soup for up to five days, then gently reheat on the stove or in the microwave.
Do I shred chicken inside the cooker?
Remove it to a plate or cutting board, cool slightly and shred before returning it.
When do the garlic and seasonings go in?
Add them to the softened vegetables for a brief cook before transferring everything to the slow cooker.
Can slow cookers finish at different rates?
Yes, cooking progress varies by model, so check chicken and rice rather than relying only on the schedule.
Any more cooking tips?
Please note that the cook times listed in this recipe can vary depending upon your slow cooker. Mine consistently finishes in this time. Use your best judgement depending upon your slow cooker model. If it is your first time making the recipe, you may want to build in extra buffer time just in case your slow cooker doesn’t get as hot as mine and others who see similar cook times. Refrigerate leftovers for up to 5 days or freeze for up to 3 months. Reheat gently on the stovetop or in the microwave. The soup tends to thicken as it sits, so you may want to thin it with additional water or stock as needed. I also find the lemon loses its punch as the soup sits, so feel free to squeeze a little more onto your freshly reheated leftovers too.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
