Beef And Mushroom Stir-Fry
Browned mushrooms and tender beef share a light, savory sauce beneath crisp garlic slices. The mushrooms catch the sauce around their edges, while the garlic topping adds a fragrant crunch. Each bite has plenty of beef flavor beneath the glossy coating.

A few quick notes
1. Marinate before cooking
Coat the beef in the listed soy, starch and baking soda mixture for ten to fifteen minutes.
2. Save the crisp garlic
Fry sliced garlic until golden and crisp, then drain on paper towels while you cook the beef and mushrooms.
3. Finish beef with mushrooms
Remove the partly cooked beef, soften the mushrooms and then return the beef to finish cooking through.
Get to know the ingredients
Beef
Diced tenderloin or flank steak is listed and finishes cooking after returning to the softened mushrooms.
Mushrooms

The last little job
Add crisp garlic last
Turn off the heat once the sauce thickens, plate the beef and mushrooms and top with the crisp garlic slices.
A little more help as you go
Keep sauce light
Aim for a light brown sauce. Stop once it thickens without cooking it into a sticky glaze.
Mix sauce in advance
Combine the sauce ingredients while the beef marinates so the mixture is ready for the final skillet stage.
A few questions you might have
Should the beef finish cooking before the mushrooms?
Remove it while partly cooked, then finish cooking it through after returning it to the softened mushrooms.
When do I add the garlic topping?
Save the fried garlic on paper towels and scatter it over the plated beef and mushrooms at the end.
What mushrooms are used?
Baby bella mushrooms are listed, with stems removed and the caps quartered before their brief stir fry.
How thick should the sauce become?
Use a light sauce, not a sticky one; turn off the heat once it thickens.
How long does the beef marinate?
Leave it coated with the soy sauces, cornstarch and baking soda for ten to fifteen minutes before cooking.
Any more cooking tips?
Tips: For the best tender beef, marinate the meat with corn starch and baking soda along with other ingredients. To ensure the beef remains tender and juicy after cooking, stir-fry the marinated beef over high heat until 70% cooked. Dish out and set aside. The beef will be cooked through while cooking with the mushrooms and sauce in the last few minutes. Do Not overcook the meat. The brown sauce should be light and not sticky.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
