Instant Pot Sweet and Sour Chicken
Pineapple and peppers give sweet and sour chicken a cheerful mix of flavors. The sauce has a tangy edge beneath its sweetness, wrapping around the tender chicken. It's a bowl to enjoy with a little fruit and pepper tucked beside the meat in each bite.

A few quick notes
1. Heat before adding chicken
Wait until the pot reads hot, add oil and let it heat before the chicken goes in.
2. Work in batches if needed
Cook the seasoned chicken in batches if that makes the initial saute easier to manage.
3. Thicken after pressure cooking
Add the cornstarch slurry only after releasing pressure, then use saute until the sauce thickens.

The last little job
Taste the thickened sauce
After the slurry thickens the sauce on saute, taste and adjust the seasoning before serving.
A little more help as you go
Whisk the sauce separately
Whisk pineapple juice, brown sugar, ketchup and vinegar together before pouring the mixture over the chicken.
Slowly vent the pressure
Open the valve slowly at the end of cooking so the pressure releases as directed.
A few questions you might have
Can I use chicken thighs?
Yes, boneless skinless thighs are one of the provided alternatives to the chicken breasts.
Can I change the sweetener?
Granulated sugar or another preferred sweetener can replace brown sugar, though the sauce flavor will change.
Can I make the flavor more savory?
Stir in the suggested soy sauce amount before serving if you prefer a saltier, more savory finish.
Should I substitute something for ketchup?
Keep the ketchup here; it supplies sweetness, acidity and spices in the sweet and sour sauce.
When do the ginger and garlic go in?
Add them with the peppers, onion, pineapple and seasonings before pouring in the whisked sauce.
Any more cooking tips?
Substitutions : You can swap boneless, skinless chicken thighs for the breasts, or use frozen meatballs or 1″ chunks of pork tenderloin. Like a more salty/savory chicken? Feel free to stir in 1 tablespoon of soy sauce before serving. Ketchup: I don’t recommend swapping the ketchup because it adds sweetness, acidity, spices and just great flavor all around! Brown sugar: you can swap for granulated sugar or another sweetener of your choice. Keep in mind that all swaps will affect the flavor of the sauce.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
