Additional recipe notes

Look for regular, unsulphured molasses like Grandma’s Original. It is a light molasses and the best variety to use for baked goods. Don’t substitute blackstrap molasses which is thicker, darker and has a bitter flavor. It should only be used in recipes that specifically call out for it. Be sure to purchase pumpkin purée and not pumpkin pie filling which has spices and other ingredients added. The cans are nearly identical and it’s an easy mistake to make. You want to use pure maple syrup in the icing, not pancake syrup, which is basically corn syrup with artificial maple flavor added.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
