Additional recipe notes

Crispy chickpeas are a fantastic stand in for croutons. Feel free to add more vegetables, like sliced avocado, cucumbers, carrots or tomatoes. I like Violife brand parmesan, which I use a peeler to make shaved parmesan. You can also use my homemade version . Use a mix of kale and romaine for variety. This makes 4-6 side salads, or 2-3 main dish salads.
