Additional recipe notes
Substitutions: This recipe can be made with any leftover fajitas, or can be prepared with sheet pan fajitas instead of skillet fajitas. Cheddar Cheese — I love cheddar cheese for my nachos, but you can also substitute Mexican blend, or monterey jack cheese if you prefer. Alternatively, you can use queso in place of shredded cheese. Sour cream — Use regular, light, or fat free! You can even use greek yogurt if you want.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
