Sweet Potato Enchiladas
Sweet potato enchiladas have an appealing soft filling under a generous coating of sauce and cheddar. Roasted poblano adds a savory note alongside the sweetness of the potato. They're inviting when you want a saucy plate with melted cheese reaching across each tortilla.

A few quick notes
1. Mash, but leave some texture
Use a fork to lightly mash the sweet potato mixture before filling. You’re not making it smooth, just breaking it up enough so it rolls easily and stays put inside the tortillas.
2. Keep the seam underneath
After rolling, place each enchilada seam side down in the sauced dish. That small move helps the tortillas stay closed while they bake under the remaining sauce and cheese.
3. Sauce the dish first
A little enchilada sauce goes into the baking dish before the rolls. It keeps the bottoms from feeling dry and gives the tortillas sauce on both sides once everything bakes.
Get to know the ingredients
Roasted poblano and sweet potato salad
This is the filling, so give it that quick fork mash before dividing it between the tortillas. Use it already roasted and prepared, not raw sweet potato.
Fajita-size flour tortillas
These smaller flour tortillas are filled evenly and folded into short, plump rolls. Don’t overthink the shape. Fold the sides toward the center until they’re closed, then set them seam side down.
Shredded cheddar
The cheddar gets used in two places: a little inside each tortilla and the rest over the top. Saving enough for the finish gives you that cheesy baked layer over the sauce.

The last little job
Bake until hot and cheesy
Once the enchiladas are covered with the rest of the sauce and cheddar, bake them at 350 degrees for about 30 minutes. The last little job is simply getting them hot through with the cheese melted on top.
A little more help as you go
Divide the filling before you roll
Lay out all four tortillas and portion the sweet potato mixture across them before folding. It’s the easiest way to keep one enchilada from ending up overstuffed and another a little skimpy.
Use a lightly sprayed dish
The baking dish gets a light coat of non-stick spray before the sauce goes in. It’s a small bit of insurance for easier serving once the enchiladas have baked.
A few questions you might have
Do I need to mash the filling completely?
No. Just mash the roasted poblano and sweet potato salad slightly with a fork. It should still have some body, but be broken up enough to divide and roll neatly.
How much filling goes in each tortilla?
Divide the mashed sweet potato mixture evenly between the four tortillas. The recipe gives about 1/2 cup per tortilla, plus a little cheddar before rolling.
Should the enchiladas be covered before baking?
The recipe doesn’t call for covering them. Once they’re in the dish, spoon over the rest of the enchilada sauce, add the remaining cheddar, and bake at 350 degrees for about 30 minutes.
What keeps the rolls from opening in the oven?
Fold the tortilla sides in toward the center, one over the other, then place the rolls seam side down in the baking dish. The sauce and cheese go on after that.
Does all the enchilada sauce go on top?
No. Pour a little into the bottom of the baking dish first, then add the rolled enchiladas and use the rest of the sauce over the top before adding the remaining cheese.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
