A few quick notes
1. Cut a pocket, not a tunnel
Use a small knife to open one side of each chicken breast, but keep the far side intact. That little pocket holds the pepperoni, peppers and cheese in place while the chicken sears.
2. Secure the filling before searing
A few toothpicks help keep the stuffed chicken closed in the hot pan. It's worth doing neatly, since the chicken gets turned once before the sauce and cheese go on.
3. Brown first, bake after
The chicken only needs to get golden in the pan before it goes into the oven. It finishes cooking in the marinara, with the reserved mozzarella melting over the top.
Get to know the ingredients
Thin mozzarella fits better
Thin slices are easier to tuck into the chicken pockets. Keep 4 slices back for topping the chicken later, and cut any larger pieces in half if you need them to fit.
Pepperoni goes inside
Each chicken breast gets 5 slices of pepperoni tucked into the pocket. Keeping it inside the chicken gives the filling that pizza-style flavor without needing extra topping later.
Slice the peppers thinly
Thin bell pepper slices are easier to fit into the pocket with the cheese and pepperoni. The amount can vary a little depending on the size of the chicken breasts.

The last little job
The last little job
After baking, check that the chicken is cooked through and the cheese has melted. Sprinkle the parsley over the top just before serving so it stays fresh and bright against the sauce.
A little more help as you go
Pan size may change the sear
If your pan feels crowded, sear the chicken in batches. The recipe brings all the chicken back into the pan before the marinara and mozzarella go on.
Season the outside well
Season the chicken with Italian seasoning, salt and pepper before putting it into the pan.
A few questions you might have
How do I keep from cutting all the way through the chicken?
Start from one side and work slowly with a small knife, stopping before you reach the other side. You're making a pocket, so the back edge needs to stay closed.
What if my chicken breasts are different sizes?
Adjust the filling slightly as needed. The recipe gives a range for the peppers and mozzarella because the pocket size depends on the chicken breast.
Do I put all the mozzarella inside the chicken?
No. Stuff some into each pocket, but reserve 4 slices to place on top of the chicken after the marinara sauce is added.
Why use toothpicks here?
They hold the pocket closed while the chicken browns on both sides. Without them, the filling can shift or slip out when you turn the chicken.
Does the chicken cook completely in the pan?
No. The pan step is for browning both sides. The chicken finishes in the oven with marinara over it and mozzarella on top.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
