Additional recipe notes
Keeping the skin on adds texture, so keep them on. Instead of baking, we are roasting the zucchini. Baking at high-temperature zucchini will get roasted on the outside yet doesn’t get fully cooked through. You would also prevent it from becoming soggy. Pre-grated bottled parmesan will also work in this recipe. But freshly grated parmesan has a better flavor on any day.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
