Additional recipe notes

Storage: Store in the fridge for up to 3 days. Reheat in a pan or air fryer to re-crisp. Gluten-free option: Use tamari instead of soy sauce. Oil-free option: Omit the oil and bake or air fry. The tofu will still get lightly crispy. Cornstarch substitute: Potato starch works as a great 1:1 substitute and can make the tofu even crispier. Arrowroot starch can also be used, but the coating may be slightly lighter and soften more quickly.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
