A few quick notes

1. Let the onion brown

Cook onion and carrot over medium-low until the onion becomes brown and soft, giving this first stage its full time.

2. Drain only excess fat

After browning beef, remove the pan from the heat and carefully drain excess fat, leaving a little to keep the meat moist.

3. Cool briefly before yogurt

Remove cooked pasta from the heat and leave it a minute before stirring in yogurt and cheddar until melted and combined.

Get to know the ingredients

Quarter-inch carrot dice

Cut the carrots small before cooking with onion, helping them soften during the longer first stage before the beef goes in.

Whole-wheat elbows

The dry elbows cook in the beef broth and water. Stir often, adding water if they become dry before reaching al dente.

Divided chives

Half the chopped chives stir through at the end. Save the rest for sprinkling over the top, or leave them out if preferred.
